Each day the cheese is re-wrapped in a cheese cloth and the bacteria get to work making the cheese that little bit more funky, smelly, sour and adding new worlds of tastes and even affecting the texture of the cheese.

With the majority of vegan cheeses having a main ingredient of coconut oil, you'll be pleasantly surprised that when cheese makers are creating aged and cultured vegan cheeses, the main ingredient that they use for this type of cheese making process is cashew nuts. They make up 62 of the 80 vegan cheeses with cultures at the time of writing.

That is nearly 80% of aged vegan cheese are made of cashews.

This obviously isn't any good for those with nut allergies, but if you're looking for healthier cheese options, then an aged and cultured cheese can be just that. Especially since the probiotics and live cultures used in the process are actually pretty good for your gut health too.
