If you're looking for a cultured and aged vegan cheese, something that more closely resembles the funky and aged cheeses tastes and smells of dairy cheese, we look at all the options available that you can buy online or in a store and should be able to find some of them at your local health food store too.

We're not going to use this guide to talk too much about probiotics, fermenting and ageing cheeses, as there are plenty of amazing resources out there on how to make your own and what happens when you add cultures to a vegan cheese and let it age. We could be writing for hours just about probiotics and how you can recreate aged dairy cheese but as a plant based alternative.

The basics of it is, probiotics and live cultures are added to the other ingredients used in the vegan cheese and then left to age and culture over time, it could be days, it could be weeks, depending on the cheese. Each day the cheese is re-wrapped in a cheese cloth and the bacteria get to work making the cheese that little bit more funky, smelly, sour and adding new worlds of tastes and even affecting the texture of the cheese.

This is how you end up with an aged and cultured vegan cheese. Each vegan cheese brand and manufacturer will have their own way of recreating this process and secret ingredients that make their cheeses so amazing.

Because this is a vegan cheese discovery resource, with the biggest catalogue of vegan cheeses, anywhere. We're going to look in to all the available cultured and aged vegan cheeses that can be bought locally or online at your favourite online health or vegan grocery store.

Main Ingredients of Cultured Vegan Cheeses

With the majority of vegan cheeses having a main ingredient of coconut oil, you'll be pleasantly surprised that when cheese makers are creating aged and cultured vegan cheeses, the main ingredient that they use for this type of cheese making process is cashew nuts. They make up 62 of the 80 vegan cheeses with cultures at the time of writing.

That is nearly 80% of aged vegan cheese are made of cashews.

This obviously isn't any good for those with nut allergies, but if you're looking for healthier cheese options, then an aged and cultured cheese can be just that. Especially since the probiotics and live cultures used in the process are actually pretty good for your gut health too.

This is similar to the recipes you'll find when looking to make your own, nearly all the vegan cheeses we have made or look at making which we're going to age and add probiotics to are made with a base of nuts, usually cashews abut sometimes other nut types as well, like macadamia nuts.

So, the vast majority of cultured vegan cheeses are made with cashews, there are other options as well, and these options will grow as we add more cheeses to the discovery app.

But what are the other main ingredients of aged and mouldy vegan cheeses?

Here are the other base and main ingredients used in aged vegan cheeses:

At the time of writing, these are all of the main and base ingredients used in the process.
