Bon Besso

The production of almond milk in Mallorca dates back to 1690, when the friars of the convent of the Minims, who were vegetarians, produced and drank it throughout the year, especially on the most important festivities. It has become popular among the population to this day as a traditional drink during the Christmas holidays. 

The Mallorcan countryside struggles to preserve its tradition of growing the local variety of almonds of excellent quality, facing the plague of "Xylella fastidiosa" or the importation of almonds from California or Australia. At Bon Bessó we thought it was time to reinvent traditional almond milk: 4 centuries later we turned it into "Redonet"!

Our Redonet is made with 100% natural, plant - based ingredients, mostly from the island: almonds, water, sea salt, extra virgin olive oil, vegan ferments and aromatic herbs, dried tomato, etc. (depending on the variety). Our almond milk is fermented in a controlled way with probiotics, responsible for the creation of lactic acid. Then it goes through moulds and once released from them, the resulting pieces are smeared with extra virgin olive oil and carefully matured in a suitable environment. During the maturing process, each Redonet will change its texture and flavour and will gain in nuances, until it becomes a real delicacy. Yes, it's made with almonds... even if it's unbelievable!
